Ingredients:
- 1 cup finely chopped garlic scapes (good luck with chopping them)
- 3⁄4 cup olive oil
- 1⁄2 cup finely grated parmesan
- 1⁄3 cup roasted, salted cashews
- lemon juice and zest to taste
- Kosher salt and freshly ground black pepper, to taste
Methods:
Place all the ingredients into a food processor and pulse until you have the consistency you prefer. Chunky or smooth. Presto pesto.
